The key to pairing organic wine with a vegan dish is to focus on the most prominent flavour in the food. For example, if you are hooked on the veggie and tofu bowl with a creamy cashew dressing that you enjoyed at your yoga retreat, try pairing the dish with an aromatic white, rosé or even a dessert wine. Light, fruity sweetness of most dessert, white and rosé wines go well with dishes laced with nut (peanuts, cashews, almonds) based sauces or dressings.
Green vegetables like avocado, broccoli, kale and even humble green beans pair well with either sparkling or light white wine. Generally, plant based food taste better with white wine rather than full-bodied reds.
